To make Baked Ziti With Eggplant, you'll need:
  • 1 lb eggplant peeled diced
  • 1 garlic clove minced
  • 4 fresh basil leaves finely chopped
  • 1/4 cup minced fresh parsley
  • 4 oz ziti
  • 1 can sodium-free tomato sauce - (15 oz)
  • 1/2 cup shredded part-skim mozzarella cheese

Method

  • Preheat the oven to 350 degrees
  • Spray an 8- by 8-inch pan with nonstick cooking spray.
