Beef Massaman Curry

Ingredients
To make Beef Massaman Curry, you'll need:
- 75g unsalted peanuts
- 400ml coconut milk
- 3 tbsp. massaman curry paste
- 550g stewing beef steak, diced
- 300g potatoes, diced
- 2 onions, roughly chopped
- 4 kaffir lime leaves (available from good supermarkets)
- 1.5 tbsp. tamarind paste
- 1.5 tbsp fish sauce
- 1 red chilli, seeds removed and finely sliced, to serve
Method
- Preheat the oven to Gas Mark 6 or 200ºC.
- Roast the peanuts on a baking tray for 5 minutes.
- Once they have cooled down, chop them roughly.
- Then lower the oven temperature to Gas Mark 4 or 200ºC.
- Heat 2 tablespoons of coconut cream in a big, casserole dish which has a lid.
- Mix in the curry paste and fry for a minute.
- Pop in the beef and cook for 6 minutes.
- Add the remaining coconut cream with half a can of water, the potatoes, onions, kaffir leaves, tamarind paste, fish sauce and the majority of the peanuts.
- Place the lid on the curry and cook in the oven for 2 hours until tender.
- Sprinkle the sliced chilli and the rest of the peanuts.
- Your dish is now ready to serve and relish!
