To make Beef Sirloin with Green Salad, you'll need:
  • 1.5 kg sirloin of beef 
  • Salt and freshly ground pepper to season 
  • 2 tbsp. olive oil 
  • Small bag of rocket 
FOR THE GREEN SALAD: 
  • 1.5 tbsp. capers, finely chopped 
  • 3 tbsp. gherkins, finely chopped 
  • 4 spring onions, finely chopped 
  • 1 tbsp. parsley, finely chopped 
  • Juice of a lemon 
  • 5 tbsp. extra-virgin olive oil

Method

  • Pre-heat the oven to Gas Mark 9 or 240ºC. 
  • Rub the oil on the meat. 
  • Then, season with salt and freshly ground black pepper.  
  • Place the beef on a baking tray and cook in the oven for 25 minutes. 
  • Lower the temperature of the oven to Gas Mark 5 or 190ºC and roast for 50 minutes. 
  • Take out of the oven and cool. 
FOR THE GREEN SALAD: 
  • Combine the capers, gherkins, spring onions, parsley, finely chopped, lemon juice and extra virgin olive oil in a bowl. 
  • Slice the beef into thin slithers and arrange on a plate. 
  • Place some salsa verde on top and garnish with rocket leaves. 
  • Your dish is now ready to enjoy!
