To make Boiled Raisin Muffins, you'll need:
  • 1 cup Seeded raisins
  • 1 cup Brown sugar or
  • 1/2 c splenda
  • 2/3 cup Shortening + butter mixture
  • 1 Egg
  • 1 tsp Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 cup Flour

Method

  • Directions Simmer raisins with just enough water to cover them for 20 minutes.Cool
  • Cream butter and shortening mixture
  • Add egg and sugar and beat well
  • Add raisins and the water they simmered in to creamed mixture and stir
  • Add the dry ingredients and stir
  • Put in muffin tins about 2/3 full and bake in oven at 350 degrees until done about 20 minutes.
