To make Butternut Squash With Ginger, you'll need:
  • Large butternut squash
  • 1 tbsp Minced fresh gingerroot
  • 1/4 cup Unsweetened apple juice

Method

  • Peel and seed the squash.
  • Cut into 1/2 inch cubes.
  • Put the squash gingerroot and apple juice into a lightly oiled baking dish.
  • Cover and bake in a 350 degree oven for 50 - 60 minutes.
  • Sprinkle with nutmeg just before serving.
  • Makes 4 servings.
