To make Carrots And Shallots With Fresh Herbs, you'll need:
  • 1 lb baby carrots
  • 1 tbsp olive oil
  • 1/4 cup chopped shallots
  • 1/2 cup low-fat low-sodium chicken broth
  • 1 tsp lemon juice
  • 1/2 cup water Salt to taste Freshly-ground black pepper to taste

  • 1/2 tbsp minced fresh parsley
  • 1/2 tbsp minced fresh dill
  • 1 tsp minced fresh rosemary

Method

  • Combine all ingredients except the herbs in a saucepan and cook over medium heat until carrots are tender about 5 to 8 minutes
  • Add the fresh herbs and toss well; cook for 1 more minute.
