To make Cauliflower Pizza, you'll need:
FOR THE PIZZA BASE:
  • Grated whole cauliflower
  • 75g almond flour
  • 3 tsp. dried oregano
  • 3 free range eggs, beaten
  • Himalayan sea salt and freshly ground black pepper to season
FOR THE PIZZA TOPPING:
  • 1 courgette, shaved with a potato peeler
  • 50g grated mozzarella
FOR THE TOMATO SAUCE:
  • 2 tbsp. olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 400g tinned tomatoes, finely chopped
  • 5 sprigs of basil, leaves picked
  • Freshly ground salt and pepper to season

Method

FOR THE TOMATO SAUCE:
  • Place the oil in a pan, then place the pan over a medium heat. 
  • Add in onion and garlic and sauté for 3-4 minutes.
  • Mix in the basil, tomatoes, salt and pepper.
  • Turn the heat down, cover and simmer for approximately 20 minutes.
FOR THE BASE & TOPPING:
  • Preheat the oven to Gas Mark 6 or 200°C.
  • Line a baking tray with greaseproof paper.
  • Finely grate the cauliflower and mix it together with the almond flour, oregano, salt and pepper.
  • Move the mix all in to one volcano shaped pile, hollow out the centre, and crack the eggs in. 
  • Fold this mix together with your hands until it creates a dough.
  • Transfer to the greaseproof paper and form into a pizza base by flattening the dough by hand. Ensure you make the base as even as possible edges slightly higher so that the topping does not just fall off.
  • Bake for 25 minutes in the preheated oven.
  • Remove from the oven and cover with the tomato sauce, shaved courgette, and grated mozzarella, then return to the oven for a further five minutes. 
  • Your meal is now ready to enjoy!
