Cheddar Muffins

Ingredients
To make Cheddar Muffins, you'll need:
- 100g self-raising flour
- 100g almond flour
- 200g vegetarian cheddar cheese, finely grated
- 2 large free range eggs
- 200ml semi-skimmed milk
- 50g butter
- 3 tsp. baking power
- ½ tsp. salt
- Pinch of freshly ground pepper
Method
- Heat the oven to Gas Mark 7 or 425°C and place 12 muffin cases on a baking tray.
- Sift the self-raising flour and baking powder into a mixing bowl, then add the almond flour, cheese, salt, and pepper.
- Melt the butter in a pan, and allow it to cool slightly.
- Mix the eggs and milk together in a separate bowl, and slowly add the butter.
- Keep whisking until the mixture is all the same colour.
- Gradually pour the liquid mixture into the dry mixture, and whisk until it is all of the same consistency. If the mixture looks curdled, add a small amount of flour until it returns to a smooth texture.
- Divide the mixture into the 12 muffin cases and place in the preheated oven.
- Bake on the middle shelf for 15 minutes.
- Allow to cool before serving.
