Cheesy Courgette Frittata

Ingredients
To make Cheesy Courgette Frittata, you'll need:
- 50g butter
- 1 medium onion, finely sliced
- 250g courgettes, finely sliced
- 8 medium eggs, lightly beaten
- 30g hard vegetarian cheese, finely grated
- Salt and freshly ground pepper to taste
Method
- Melt 25g of the butter in a large non stick frying pan. They, fry the onion for 2 minutes.
- Pop in the sliced courgette and fry for 4 minutes until they are soft.
- Turn on the grill.
- Put the remaining 25g of butter into the frying pan.
- Season the eggs with salt and pepper to taste, pour into the frying pan and cook for 3 minutes.
- Sprinkle the frittata with rated cheese and place under the preheated grill for 2 minutes until fully set.
- Cut into quarter and tuck in.
- Scrumptious hot or cold!
