To make Cheesy Stuffed Mushrooms with Tomato, you'll need:
  • 8 large Portobello mushrooms
  • 4 cloves garlic, crushed
  • 1tbsp. wholegrain Dijon mustard
  • 220g cheese grated
  • 75g breadcrumbs
  • 3 tbsp. double cream
  • Fresh curly parsley, finely chopped
  • Salt and freshly ground pepper to taste

Method

  • Mix the garlic, mustard, cheese, cream, breadcrumbs and parsley together.
  • Season with salt and freshly ground pepper.
  • Preheat the oven to Gas Mark 4 or 180ºC.
  • Drizzle the olive oil on the mushrooms with olive oil and bake in the preheated oven for 15 minutes.
  • Take out the mushrooms from the oven and fill each one with the breadcrumbs.
  • Finish by grilling until golden.
  • Sprinkle with chopped parsley and freshly ground black pepper.
