To make Chicken Breasts With Balsamic Vinegar, you'll need:

  • 1 cup White wine
  • 1/2 cup Freshly squeezed orange juice
  • 1/2 cup Balsamic vinegar
  • 1/2 cup Golden raisins
  • 1/2 cup Dried currants
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Grated lemon zest
  • 2 tbsp Grated orange zest
  • 2 tbsp Chopped fresh tarragon (or
  • 1/4 teaspoon dried)
  • 1/4 tsp Salt
  • 1/4 tsp Freshly ground white pepper

Method

  • Pound the chicken fillets to a uniform thickness of 1/3 inch (or have the butcher do it).
