To make Chicken Noodle Roll-Ups, you'll need:
  • 9 uncooked lasagna noodles - (abt
  • 9 oz)
  • 8 oz boneless skinless chicken breasts cut into chunks
  • 2 cups finely-chopped broccoli
  • 2 cups low-fat cottage cheese
  • 1 egg
  • 2 tsp minced fresh chives
  • 1/4 tsp ground nutmeg
  • 1/4 tsp freshly-ground black pepper
  • 1 tbsp reduced-calorie margarine
  • 2 tbsp all-purpose flour
  • 1 cup
  • 33%-less-salt chicken broth
  • 1/2 cup fat-free (skim) milk
  • 1/2 tsp dry mustard
  • 1 medium tomato seeded chopped

Method

  • Cook lasagna noodles according to package directions omitting salt
  • Drain and rinse well under cold water
  • Place in single layer on aluminum foil.
