To make Chicken with Mushrooms in a Balsamic Sauce, you'll need:
  • 800g of chicken breasts, 
  • 2 tsp. garlic, finely chopped 
  • 1 green pepper, chopped into fine slices 
  • 2 tbsp. dark balsamic vinegar 
  • 200g button mushrooms 
  • 1 large onion, finely sliced 
  • 1 tbsp. olive oil 
  • Salt and freshly ground pepper to taste 

Method

  • Preheat the oven to Gas Mark 6 or 200°C.
  • Heat the oil in a medium size saucepan.
  • Seal the chicken in the heated oil by cooking on both sides until the meat whitens. 
  • This takes 5 minutes.
  • Drain the fried chicken on some kitchen paper and place aside to cool down.
  • Pop the slices of pepper and onion into a bowl.
  • Add in the garlic and mushrooms, and pour on the balsamic vinegar.
  • Season with salt and freshly ground pepper.
  • Leave in the fridge to marinate for an hour.
  • Cook for 30 minutes and serve with veggies of your choice!
