Ingredients
To make Chicken with Spelt, you'll need:
  • 200g spelt 
  • 400ml water 
  • 2 tbsp. olive oil 
  • 1 small red onion, finely chopped 
  • Salt and freshly ground black pepper to tasted 
  • 2 medium sized tomatoes, finely chopped 
  • 4 chicken breasts 
  • 2 tsp. coriander, finely chopped

Method

  • Preheat oven to Gas Mark 5 or 190°C. 
  • To prepare the spelt, place it in 400ml of boiling water, lower the heat, and simmer for 20 minutes. 
  • Put a tablespoon of olive oil in a frying pan, and place it over a medium heat. 
  • Then, fry the red onion in the olive oil. 
  • Once the spelt is cooked, season it with salt and black pepper, and then add the tomatoes. 
  • Line a baking tray with baking parchment, then put the chicken breasts on top, drizzle with the other tablespoon of olive oil, and cook for 20 minutes. 
  • Serve the cooked chicken on a bed of tomato spelt, garnish with coriander and tuck in!
