Chicken with Spelt

Ingredients
To make Chicken with Spelt, you'll need:
- 200g spelt
- 400ml water
- 2 tbsp. olive oil
- 1 small red onion, finely chopped
- Salt and freshly ground black pepper to tasted
- 2 medium sized tomatoes, finely chopped
- 4 chicken breasts
- 2 tsp. coriander, finely chopped
Method
- Preheat oven to Gas Mark 5 or 190°C.
- To prepare the spelt, place it in 400ml of boiling water, lower the heat, and simmer for 20 minutes.
- Put a tablespoon of olive oil in a frying pan, and place it over a medium heat.
- Then, fry the red onion in the olive oil.
- Once the spelt is cooked, season it with salt and black pepper, and then add the tomatoes.
- Line a baking tray with baking parchment, then put the chicken breasts on top, drizzle with the other tablespoon of olive oil, and cook for 20 minutes.
- Serve the cooked chicken on a bed of tomato spelt, garnish with coriander and tuck in!
