Ingredients
To make Chickpea And Pasta Soup, you'll need:
  • 1 tbsp olive oil
  • 7 garlic cloves minced
  • 2 tbsp minced rosemary
  • 2 cups crushed tomatoes
  • 2 cups low-fat low-sodium chicken broth
  • 1 cup cooked chickpeas
  • 1 cup cooked elbow macaroni Salt to taste Freshly-ground black pepper to taste

Method

  • Heat the oil in a large stockpot over medium heat
  • Add the garlic and saute for 3 minutes
  • Add the rosemary and saute for 2 minutes
  • Add the crushed tomatoes and simmer for 15 minutes.
