To make Chinese Pepper Steak, you'll need:
  • Flank or skirt steak; well -trimmed of any fat
  • 200 tb Cornstarch
  • 200 tb Low salt soy sauce
  • 200 md Green peppers; sliced 025 lb Mushroom; sliced Vegetable oil spray
  • 100 tb Fresh ginger; chopped
  • 200 cl Garlic; crushed 025 c Dry sherry 025 c Defatted low-salt chicken -stock

Method

  • Remove as much fat as possible from the meat
  • Cut across the grain into 1/4 inch slices and cut again into 1-inch pieces
  • Mix coenstarch and soy sauce together
  • Place mear in mixture making sure it is completely covered
  • Wash seed and slice peppers about 1.4 inch thick
  • Wash and slice mushrooms
  • Spray wok or skillet with vegetable oil spray
  • Heat wok and add ginger and garlic
  • When wok is smoking add meat and stir fry 1 minute
  • Reove toa plate
  • Spray wok again and add peppers and mushrooms
  • Stir fry 2 minutes
  • Return meat to pan and add sherry and stock
  • Stir fry 3 minutes
  • Remove to a serving bowl.
