Chocolate Brownies

Ingredients
To make Chocolate Brownies, you'll need:
- 100g of almond flour
- 35g of unsweetened cocoa
- 2 medium eggs
- The whites of 2 large eggs, whisked
- 250g full fat cream cheese
- 80ml semi skimmed milk
- 1 tsp. vanilla extract
- 2 tbsp. of runny honey
- Pinch of salt
Method
- Preheat the oven to Gas Mark 5 or 190°C.
- Beat the two medium eggs in a large bowl.
- In a separate bowl, combine the almond flour, cocoa, and a pinch of salt.
- Add the whisked egg whites to the flour/ cocoa mixture.
- Mix the beaten eggs and egg whites with the flour/cocoa mixture.
- Add the vanilla extract, honey, milk, and the cream cheese.
- Mix thoroughly.
- Place the mixture in a 9-inch, greased, square, non-stick cake tin.
- Boil the kettle, and put some of the water in a cereal bowl.
- Using the back of a metal spoon that’s been dipped in the hot water, spread the mixture evenly.
- Bake for around 25 minutes. To test if the brownies are cooked properly, poke a skewer (or similarly long, thin object) into the middle.
- If it comes out clean, the brownies are cooked. If not, the ingredients haven’t set, and the brownies need to be cooked for longer.
- Once the cooked brownies have cooled, cut them into squares and enjoy!
