To make Chorizo and Chicken Salad, you'll need:
  • 800g cooked chicken, cut into chunks
  • 100g chorizo
  • 100g rocket
  • 200g cherry tomatoes
  • 4 tbsp. olive oil (used separately)
  • 2 tbsp. tarragon
  • 2 garlic cloves, crushed
  • 2 tbsp. white wine vinegar
  • Freshly ground black pepper

Method

  • Combine 2 tablespoons of olive oil, crushed garlic and tarragon in a bowl.
  • Add the chicken breast chunks to this olive oil mixture, ensuring that the chicken is covered and soaked. 
  • Leave it to marinade in the fridge for 35 minutes, or overnight if possible.
  • In a frying pan, fry the marinated chicken and chorizo slices in one tablespoon of olive oil for around 3 minutes.
  • Combine the rocket and tomatoes to make a salad. 
  • Add in the white wine vinegar, one tablespoon of olive oil and pepper and stir through the salad.
  • Mix in the chicken and chorizo, or arrange it on top, and your salad is ready to serve!
