Chorizo and Chicken Salad

Ingredients
To make Chorizo and Chicken Salad, you'll need:
- 800g cooked chicken, cut into chunks
- 100g chorizo
- 100g rocket
- 200g cherry tomatoes
- 4 tbsp. olive oil (used separately)
- 2 tbsp. tarragon
- 2 garlic cloves, crushed
- 2 tbsp. white wine vinegar
- Freshly ground black pepper
Method
- Combine 2 tablespoons of olive oil, crushed garlic and tarragon in a bowl.
- Add the chicken breast chunks to this olive oil mixture, ensuring that the chicken is covered and soaked.
- Leave it to marinade in the fridge for 35 minutes, or overnight if possible.
- In a frying pan, fry the marinated chicken and chorizo slices in one tablespoon of olive oil for around 3 minutes.
- Combine the rocket and tomatoes to make a salad.
- Add in the white wine vinegar, one tablespoon of olive oil and pepper and stir through the salad.
- Mix in the chicken and chorizo, or arrange it on top, and your salad is ready to serve!
