Ingredients
To make Chunky Lobster Rolls, you'll need:
  • 1
  • 1/2 lb cooked lobster meat cartilage removed
  • 3 garlic cloves minced
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup sliced celery
  • 1/2 cup minced scallions
  • 1 tbsp lemon juice
  • 1 cup shredded romaine lettuce
  • 6 whole-wheat pita bread halves = (or whole-grain hamburger rolls)

Method

  • Mix together the cooked lobster with all ingredients except the lettuce and bread
  • If using pita bread stuff ingredients into the pocket and serve.
