Ingredients
To make Cornmeal Flan, you'll need:
- 2 tbsp. garlic
- 1 tsp. red chilli flakes
- Freshly ground salt and pepper
- 220ml semi skimmed milk
- 220g cheddar cheese, grated
- 200g cornmeal
- 300g almond flour
- 1 medium white onion, finely chopped
- 150g plum tinned tomatoes, finely chopped
- 2 medium tomatoes, sliced
Method
- Preheat your oven to Gas Mark 4 or 180°C.
- Grease a 9-inch flan case with butter and line with baking parchment.
- Pop the garlic, chilli flakes, salt and pepper into a large mixing bowl.
- Add in the milk, 200g of the cheddar cheese, cornmeal, almond flour, finely chopped onion and tinned tomatoes, and stir thoroughly.
- Pour the mixture into the flan case and bake for 20-30 minutes. Top with the sliced tomatoes.
- Test if the flan is cooked by using a skewer, If it comes out clean you know the flan is ready to be removed from the oven.
- To serve, top with the remaining cheddar cheese, slice, plate up and relish!
- This flan is equally delicious hot or cold!
