Ingredients
To make Cornmeal Flan, you'll need:
  • 2 tbsp. garlic
  • 1 tsp. red chilli flakes
  • Freshly ground salt and pepper
  • 220ml semi skimmed milk
  • 220g cheddar cheese, grated
  • 200g cornmeal
  • 300g almond flour
  • 1 medium white onion, finely chopped
  • 150g plum tinned tomatoes, finely chopped
  • 2 medium tomatoes, sliced

Method

  • Preheat your oven to Gas Mark 4 or 180°C.
  • Grease a 9-inch flan case with butter and line with baking parchment.
  • Pop the garlic, chilli flakes, salt and pepper into a large mixing bowl.
  • Add in the milk, 200g of the cheddar cheese, cornmeal, almond flour, finely chopped onion and tinned tomatoes, and stir thoroughly.
  • Pour the mixture into the flan case and bake for 20-30 minutes. Top with the sliced tomatoes.
  • Test if the flan is cooked by using a skewer, If it comes out clean you know the flan is ready to be removed from the oven.
  • To serve, top with the remaining cheddar cheese, slice, plate up and relish!
  • This flan is equally delicious hot or cold!
