To make Far East Salad, you'll need:
  • 1 cup shredded lettuce
  • 1/2 cup coarsely chopped fresh broccoli
  • 1/2 cup fresh snow peas if frozen thaw
  • 1/4 cup shredded carrot
  • 1/4 cup canned sliced water chestnuts
  • 1/4 whole green bell pepper or red cut into strips
  • 1/2 cup fresh bean sprouts
  • 1 tbsp canola oil
  • 1 tsp lemon juice

Method

  • Arrange the shredded lettuce to cover a dinner plate
  • In layers add the broccoli snow peas carrots water chestnuts bell pepper and bean sprouts
  • Whisk together the remaining ingredients and pour the dressing over the salad.
