Festive Spinach Soup

Ingredients
To make Festive Spinach Soup, you'll need:
- 75g butter
- 1 large onion, finely chopped
- 3 garlic cloves, finely chopped
- 2 medium potatoes, peeled and diced
- 625g vegetable stock
- 900ml milk
- 625g fresh spinach, washed if necessary and roughly chopped
- Zest and juice of a lemon
- Ground or freshly grated nutmeg, to taste
- 5 tbsp. double cream, to serve
Method
- Place the butter in a large, lidded and saucepan and allow it to melt over a low heat.
- Then, add the onion and garlic, and fry gently for 5-6 minutes until softened.
- Stir in the potato and continue to cook for 1 minute.
- Pour in the stock and simmer for 8-10 minutes until the potato is cooking.
- Pour in the milk, and stir in half of the spinach and the lemon zest.
- Cover and simmer for 15 minutes until the spinach has completely wilted.
- Allow the soup to cool for about 5 minutes.
- Pour the soup into a blender.
- Add the rest of the spinach to keep the soup bright and fresh-tasting.
- Whizz the soup until silky smooth and season with salt, pepper, and nutmeg.
- To serve, heat the soup through, ladle it into bowls, and swirl in some double cream.
