To make Festive Spinach Soup, you'll need:
  • 75g butter 
  • 1 large onion, finely chopped 
  • 3 garlic cloves, finely chopped 
  • 2 medium potatoes, peeled and diced 
  • 625g vegetable stock 
  • 900ml milk 
  • 625g fresh spinach, washed if necessary and roughly chopped 
  • Zest and juice of a lemon 
  • Ground or freshly grated nutmeg, to taste 
  • 5 tbsp. double cream, to serve 

Method

  • Place the butter in a large, lidded and saucepan and allow it to melt over a low heat.
  • Then, add the onion and garlic, and fry gently for 5-6 minutes until softened.
  • Stir in the potato and continue to cook for 1 minute. 
  • Pour in the stock and simmer for 8-10 minutes until the potato is cooking. 
  • Pour in the milk, and stir in half of the spinach and the lemon zest.
  • Cover and simmer for 15 minutes until the spinach has completely wilted. 
  • Allow the soup to cool for about 5 minutes.
  • Pour the soup into a blender. 
  • Add the rest of the spinach to keep the soup bright and fresh-tasting.
  • Whizz the soup until silky smooth and season with salt, pepper, and nutmeg.
  • To serve, heat the soup through, ladle it into bowls, and swirl in some double cream.
