To make Fettuccine Alfredo Ii, you'll need:
  • 9 oz uncooked fettuccine pasta
  • 1 medium zucchini sliced long thin noodle-like strips
  • 1 tbsp unsalted butter or margarine
  • 1 tbsp all-purpose flour
  • 3/4 cup low-fat (1%) milk
  • 1/2 cup fresh grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • 1/4 tsp nutmeg

Method

  • Cook the pasta according to package directions omitting the salt
  • In the last minute of cooking time add the zucchini strips
  • Drain and place in a serving bowl; keep warm.
