To make Fresh Broccoli Salad, you'll need:
  • 1 lb fresh broccoli stems peeled and sliced diagonally separated into florets
  • 1 red pepper diced
  • 1 garlic clove minced
  • 2 tbsp red onion minced
  • 1/2 cup red wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh chives
  • 2 tbsp chopped fresh parsley
  • 1 tsp dried basil Freshly-ground black pepper to taste
  • 1/2 head romaine lettuce torn bite size

Method

  • Steam the broccoli for 5 minutes
  • Immediately rinse the broccoli under cold running water to stop the cooking process and help the broccoli retain its bright green color.
