To make Fried Chicken, you'll need:
  • 6 chicken drumsticks skin on
  • 120g ground almonds
  • 1/2 tsp ginger powder
  • 1/2 tsp dried parsley
  • 1 tsp paprika
  • 1/4 tsp chili powder
  • 1/2 tsp dried sage
  • 1/2 tsp mustard powder
  • 1/4 tsp Chinese five spice
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Method

  • Place the ground almonds and all of the spices and herbs into a plastic bag and shake to mix.
  • Then add in the chicken drumsticks, shake, and rub the mixture through the bag onto the chicken.
  • Coat the bottom of a baking dish with olive oil.
  • Place the chicken drumsticks onto the olive oil and bake in a preheated oven set at 180 degrees for 45 minutes.
  • Turn the drumsticks 2 or 3 times whilst cooking so that all of the coating gets covered in the olive oil.
