To make Fruit Frenzy, you'll need:
  • 100g raspberries
  • 60ml water
  • 1 tbsp. Stevia
  • 1½ tbsp. agave nectar
  • 1 tbsp. cornflour
  • 180ml semi-skimmed milk
  • 100g canned pears, drained
  • 100g canned peaches, drained

Method

  • Place the raspberries in a small bowl.
  • Warm up the water and add the Stevia until it melts and forms a syrup then pour on top of the raspberries, ensuring they are covered.
  • Place this in the fridge.
  • Combine the agave nectar and cornflour with 2 tablespoons of the milk in a small dish.
  • Bring the remainder of the milk to boil, then stir in the cornflour mixture to thicken it into a custard. 
  • Remove the mixture from the hob, and let it cool.
  • Purée the pears and peaches by blending them until they are smooth. 
  • Purée some of the raspberries, leaving as many as you would like to garnish at the end. 
  • Place the mixture to one side.
  • Add the thickened milk custard mixture to the pears and peaches mixture and stir well. 
  • Pour the Stevia/raspberry mixture into a sundae/ dessert dish. 
  • Top with custard mixture and garnish with the raspberries that you didn’t purée.
  • Chill for one to two hours and enjoy!
