To make Fruit Tea Loaf, you'll need:
  • 120ml hot Earl Grey tea
  • 175g sultanas
  • 100g dried figs, chopped
  • 100g dried prunes, chopped
  • Butter, for greasing
  • 2 tbsp. vegetable oil
  • 120g Stevia
  • 2 eggs, beaten
  • 100g plain flour
  • 125g almond flour
  • 1.5 tsp. baking powder
  • 2.5 tsp. mixed spice

Method

  • Put the tea, sultanas, chopped figs, and chopped prunes in a bowl and mix them together thoroughly. 
  • Leave to stand for 30 minutes.
  • Preheat the oven to Gas Mark 5 or 190°C.
  • Grease a 900g loaf tin with some butter and line with baking parchment.
  • Put the Stevia, eggs, and oil in a large bowl and beat for 3 minutes. 
  • Throw in the plain flour, almond flour, baking powder, and mixed spice, then mix thoroughly.
  • Place the mixture into the greased loaf tin, and use a spoon to smoothen the surface.
