Ginger and Garlic Chicken

Ingredients
To make Ginger and Garlic Chicken, you'll need:
- 800g cooked brown basmati rice
- 2 tbsp. oil
- 8 boneless chicken breasts, minus skin
- 3 tsp. freshly chopped ginger
- 4 garlic cloves, finely chopped
- 2 tbsp. light soya sauce
- 6 tbsp. water
- Salt and ground black pepper to taste
Method
- Pour some water into a pan until it’s around two-thirds of the way full, then pop in the uncooked rice.
- Over a low heat, cook the rice for 35 minutes, then drain and set to one side.
- Preheat the oven to Gas Mark 6 or 200°C.
- Pour the oil into a large saucepan and place over a medium heat.
- Once the oil’s hot, fry the chicken for 5 minutes, ensuring that it turns white all over.
- Mix the ginger, garlic, soya and water together in a bowl.
- Pour this mixture onto the chicken breasts, ensuring that the chicken is thoroughly coated all over.
- Place the chicken on a sheet of tin foil and season to taste with salt and ground black pepper.
- Put the foil on an oven proof dish and bake for 30 minutes in the preheated oven.
- Your dish is now ready to serve with sides of your choice, served on a bed of brown basmati rice.
