Ingredients
To make Greek Potato Salad, you'll need:
  • 2 tbsp Olive oil
  • 2 tbsp Scallion chopped
  • 3 tbsp Bell pepper chopped
  • 2 tbsp Wine vinegar
  • 1/2 tsp Oregano
  • 2 cup Potatoes diced
  • 1/4 cup Feta crumbled
  • 2 tbsp Black olives diced pitted Cherry tomatoes and black olives for garnish

Method

  • Combine the olive oil scallion green pepper vinegar and oregano in a skillet
  • SAute over medium heat for about 3 minutes until green pepper is tender
  • Stir in the potatoes olives and feta cheese
  • Toss to mix
  • Serve warm with cherry tomatoes and whole ripe olives.
