To make Grilled Aubergine, you'll need:
  • 2 large aubergines, sliced 
  • 2 tbsp. olive oil 
  • 250g low fat natural yoghurt 
  • 3 tbsp. tahini paste 
  • 3 garlic cloves, finely chopped 
  • Juice of 1 lemon 
  • 1 tbsp. mixed herbs (coriander, mint & parsley) 
  • Salt and pepper to season

Method

  • Brush each slice of aubergine with a little olive oil and season. 
  • Heat the barbecue or griddle pan. 
  • Once the barbecue or pan is hot, cook the aubergine slices on both sides for a couple of minutes. 
  • Combine the yoghurt, tahini paste, garlic, lemon juice and herbs and season.
