Grilled Aubergine

Ingredients
To make Grilled Aubergine, you'll need:
- 2 large aubergines, sliced
- 2 tbsp. olive oil
- 250g low fat natural yoghurt
- 3 tbsp. tahini paste
- 3 garlic cloves, finely chopped
- Juice of 1 lemon
- 1 tbsp. mixed herbs (coriander, mint & parsley)
- Salt and pepper to season
Method
- Brush each slice of aubergine with a little olive oil and season.
- Heat the barbecue or griddle pan.
- Once the barbecue or pan is hot, cook the aubergine slices on both sides for a couple of minutes.
- Combine the yoghurt, tahini paste, garlic, lemon juice and herbs and season.
