Ingredients
To make Grilled Vegetable Basket, you'll need:
  • MARINADE
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 garlic cloves minced
  • 2 tsp minced rosemary
  • 1 tsp minced basil
  • 2 tsp lemon peel Salt to taste Freshly-ground black pepper to taste VEGETABLES
  • 2 Belgian endives halved lengthwise
  • 1 fennel bulb halved lengthwise
  • 1 small zucchini sliced on the diagonal into
  • 2" slices
  • 1 small red onion sliced into six
  • 2"-thk slices

Method

  • Puree the marinade ingredients in a blender until smooth.
  • Set aside.
