To make Grilled Vegetable Muffuletta, you'll need:
  • 10 garlic cloves peeled Nonstick cooking spray as needed
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp freshly-ground black pepper
  • 1 round loaf whole-wheat sourdough bread (16 oz)
  • 1 medium eggplant cut crosswise into eight
  • 1/4"-thick slices
  • 2 small yellow squash cut lengthwise into thin slices
  • 1 small red onion thinly sliced
  • 1 large red bell pepper seeded quartered
  • 2 slices reduced-fat Swiss cheese - (1 oz ea)
  • 8 washed spinach leaves

Method

  • Preheat oven to 350 degrees
  • Place garlic in ovenproof dish
  • Spray garlic with cooking spray
  • Cover with foil; bake 30 to 35 minutes or until garlic is very soft and golden brown.
