Ingredients
To make Healthy Bolognese, you'll need:
  • 2 onions, chopped 
  • 2 carrots, grated 
  • 4 cloves of garlic, finely chopped 
  • 100g mushrooms, finely chopped 
  • 1 stick of celery, finely diced 
  • 400g lean lamb mince 
  • 400g canned tomatoes, finely chopped 
  • 100ml water 
  • 1 tbsp. olive oil 
  • 2 tbsp. tomato puree 
  • ½ tsp. paprika 
  • Season with salt and pepper 
  • 400g of cooked brown long grain rice (100g cooked rice per serving) 

Method

  • Sauté the onions, garlic, carrot, mushrooms and celery in the olive oil over a medium heat until softened. 
  • Add the lamb and cook for 5 to10 minutes until browned. 
  • Stir through the tomatoes and tomato puree cook for about 3 minutes. 
  • Add the paprika and water. 
  • Cover the pan and cook over a low heat for around 30 minutes until the sauce is thick and rich. 
  • Season to taste and set the pan aside until ready to serve. 
  • Serve immediately with the cooked brown rice.
