Healthy Bolognese
Serves: 4
Ingredients
To make Healthy Bolognese, you'll need:
- 2 onions, chopped
- 2 carrots, grated
- 4 cloves of garlic, finely chopped
- 100g mushrooms, finely chopped
- 1 stick of celery, finely diced
- 400g lean lamb mince
- 400g canned tomatoes, finely chopped
- 100ml water
- 1 tbsp. olive oil
- 2 tbsp. tomato puree
- ½ tsp. paprika
- Season with salt and pepper
- 400g of cooked brown long grain rice (100g cooked rice per serving)
Method
- Sauté the onions, garlic, carrot, mushrooms and celery in the olive oil over a medium heat until softened.
- Add the lamb and cook for 5 to10 minutes until browned.
- Stir through the tomatoes and tomato puree cook for about 3 minutes.
- Add the paprika and water.
- Cover the pan and cook over a low heat for around 30 minutes until the sauce is thick and rich.
- Season to taste and set the pan aside until ready to serve.
- Serve immediately with the cooked brown rice.
