To make Healthy Potato Salad, you'll need:
  • 2 medium potatoes peeled and cut into
  • 1/2-inch cubes
  • 1 hard-cooked egg sliced
  • 1/4 cup chopped celery
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped onion
  • 2 tbsp chopped pimento
  • 1 tbsp mustard
  • 4 tbsp lite mayonnaise

Method

  • Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm (be careful not to overcook )
  • Drain and cool
  • Mix all ingredients together and chill before serving.
