Ingredients
To make Island Sweet Potato Pudding, you'll need:
  • 12 oz Cooked sweet potatoes peeled and cut in chunks
  • 1 medium Ripe banana mashed
  • 3 tsp Brown sugar firmly packed
  • 2 tbsp Reduced calorie margarine +
  • 2 tsp Reduced calorie margarine
  • 1/4 tsp Ground nutmeg
  • 1 tsp Rum extract
  • 1 Egg white

Method

  • Preheat oven to 350
  • In a large bowl beat all ingredients except egg white until smooth
  • Add a small amount of water if necessary to get a smooth consistency
  • Beat egg white until stiff
  • Fold gently into sweet potato mixture
  • Spoon into a casserole that has been sprayed with a nonstick cooking srpay
  • Bake uncovered 45 to 50 minutes until lightly browned.
