Ingredients
To make Japanese Noodle Soup, you'll need:
  • 1 package Japanese udon noodles - (8
  • 1/2 oz)
  • 1 tsp vegetable oil
  • 1 medium red bell pepper cut thin strips
  • 1 medium carrot diagonally sliced
  • 2 green onions thinly sliced
  • 2 cans fat-free reduced-sodium beef broth (14 oz ea)
  • 1 cup water
  • 1 tsp reduced-sodium soy sauce
  • 1/2 tsp grated fresh ginger
  • 1/2 tsp freshly-ground black pepper
  • 2 cups thinly-sliced fresh shiitake mushrooms stems removed
  • 4 oz daikon (Japanese radish) peeled and cut into thin strips
  • 4 oz firm tofu drained and cut into
  • 1/2" cubes

Method

  • Cook noodles according to package directions omitting salt; drain
  • Rinse; set aside.
