Ingredients
To make Kiwi Pavlova, you'll need:
- 4 large free range eggs whites
- 25g raspberries
- 25g blueberries
- 50g strawberries
- ½ ripe mango
- 4 kiwi fruit
- A pinch of salt
- ¼ tsp. cream of tartar
- 1 tsp. vanilla essence
- 25g Triple Zero sweetener
Method
- Preheat your oven at Gas Mark 1 or 140°C.
- Line a baking tray with grease-proof paper and grease it will with butter.
- Separate the eggs by cracking their shells and dripping the whites into a bowl, while holding the yolks back.
- Using an electric whisk, beat the egg whites until stiff, adding a pinch of salt and cream of tartar.
- Use a spatula to fold the vanilla essence and Triple Zero sweetener into egg whites. This will ensure that you mix the ingredients thoroughly without losing the firm texture of the eggs.
- Spoon the exact amount of mixture you want for each meringue nest onto the prepared baking tray. Make a small dip in each one for the fruit topping.
- Pop into the pre-heated oven and bake for an hour. Then, set aside to cool down.
- Top the meringue nests with raspberries, slices of mango, kiwi and strawberries and enjoy!
