Ingredients
To make Lamb Curry, you'll need:
  • 2 tbsp. vegetable oil 
  • 300g lean lamb, cubed 
  • 1 onion, finely chopped 
  • 4 garlic cloves, finely chopped 
  • 2 carrots, sliced into 
  • ½ inch slices 
  • 500ml hot chicken stock
  • ½ tsp. turmeric 
  • 2 tsp. ground cumin 
  • ½ tsp. ground coriander 
  • 1 large tomato, finely chopped 
  • 1.5 tbsp. parsley, finely chopped 
  • Salt and freshly ground black pepper to taste

Method

  • Put the oil in a large saucepan, and place over a medium heat. 
  • When it’s hot, add the lamb, and brown all over. This should take 5 minutes. 
  • Add the onion and the garlic, then sauté for 3 minutes. 
  • Then, add the carrots, hot chicken stock, turmeric, ground cumin, and ground coriander. 
  • Bring this mixture to the boil.
  • Lower the heats, cover, and simmer for 20 minutes. 
  • Stir in the chopped tomato and parsley, and cook for 2 minutes. 
  • Season with salt and pepper to taste.
