Ingredients
To make Lamb Curry, you'll need:
- 2 tbsp. vegetable oil
- 300g lean lamb, cubed
- 1 onion, finely chopped
- 4 garlic cloves, finely chopped
- 2 carrots, sliced into
- ½ inch slices
- 500ml hot chicken stock
- ½ tsp. turmeric
- 2 tsp. ground cumin
- ½ tsp. ground coriander
- 1 large tomato, finely chopped
- 1.5 tbsp. parsley, finely chopped
- Salt and freshly ground black pepper to taste
Method
- Put the oil in a large saucepan, and place over a medium heat.
- When it’s hot, add the lamb, and brown all over. This should take 5 minutes.
- Add the onion and the garlic, then sauté for 3 minutes.
- Then, add the carrots, hot chicken stock, turmeric, ground cumin, and ground coriander.
- Bring this mixture to the boil.
- Lower the heats, cover, and simmer for 20 minutes.
- Stir in the chopped tomato and parsley, and cook for 2 minutes.
- Season with salt and pepper to taste.
