To make Lamb Cutlets, you'll need:
  • 4 bell peppers, 2 green and 2 red, sliced into large chunks
  • 2 sweet potatoes, peeled and sliced in to big chunks
  • Two red onions, cut into wedges
  • 2 tbsp. olive oil
  • Freshly ground black pepper to season
  • 12 lamb cutlets
  • 2 tbsp. thyme
  • 2 tbsp. mint leaves, finely chopped

Method

  • Preheat the oven on Gas Mark 7 or 210°c.
  • Place the bell peppers, sweet potato, and onion in a large baking tray, then drizzle the olive oil and freshly ground black pepper on top. 
  • Roast the vegetables in the preheated oven for 20 minutes.
  • Trim any fat off the lamb, and mix the herbs (thyme and mint leaves) with a little bit of black pepper. 
  • Spread the herbs all over the lamb.
  • Take the vegetables out of the oven. 
  • Cook the cutlets on a hot baking tray for ten minutes.
  • Turn them over, and cook for another 10 minutes, along with the veggies.
  • Place the cutlets on the hot tray and return them to the oven for 10 minutes. 
  • The meat should be somewhat charred.
  • To serve, stack veggies in the centre of a platter, and place the lamb cutlets around them.
