To make Lemon Cashew Chicken Stir-Fry, you'll need:
  • 1 tbsp peanut oil
  • 1 lb chicken tenders cut
  • 1
  • 1/2" pieces
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 2 garlic cloves minced
  • 1 cup matchstick-size carrot strips
  • 1/2 cup fat-free reduced-sodium chicken broth
  • 1 tbsp dry sherry - (to
  • 2)
  • 2 tsp sugar
  • 1/2 tsp grated lemon peel
  • 3 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1/8 tsp freshly-ground white pepper
  • 1 package frozen snow pea pods - (6 oz) thawed
  • 3 cups hot cooked rice
  • 1/3 cup chopped cashews

Method

  • Heat oil in large skillet over medium-high heat until hot
  • Add chicken; cook and stir 7 to 8 minutes or until chicken is no longer pink in center.
