Lemon Glazed Chicken

Ingredients
To make Lemon Glazed Chicken, you'll need:
- 4 chicken breasts, skinless
- Juice and zest of 2 lemons
- 2 tsp. garlic, peeled and finely chopped
- 1 green bell pepper, chopped into squares
- 1 tbsp. Dijon mustard
- 2 tbsp. vegetable oil
Method
- First, preheat the oven to Gas Mark 6 or 200°C.
- Cut the chicken breasts into bite-size pieces.
- Heat a tablespoon of oil in a frying pan and add the chicken. Cook for approx. 5 minutes or until the chicken turns white in colour.
- Mix the mustard, garlic and lemon zest in a bowl and marinate the chicken for at least an hour.
- Transfer the marinated chicken to an ovenproof dish and cook in the pre heated oven for 25 minutes.
- Savour with summer veggies of your choice!
