To make Lemon Glazed Chicken, you'll need:
  • 4 chicken breasts, skinless 
  • Juice and zest of 2 lemons 
  • 2 tsp. garlic, peeled and finely chopped 
  • 1 green bell pepper, chopped into squares 
  • 1 tbsp. Dijon mustard 
  • 2 tbsp. vegetable oil 

Method

  • First, preheat the oven to Gas Mark 6 or 200°C.
  • Cut the chicken breasts into bite-size pieces.
  • Heat a tablespoon of oil in a frying pan and add the chicken. Cook for approx. 5 minutes or until the chicken turns white in colour.
  • Mix the mustard, garlic and lemon zest in a bowl and marinate the chicken for at least an hour.
  • Transfer the marinated chicken to an ovenproof dish and cook in the pre heated oven for 25 minutes.
  • Savour with summer veggies of your choice!
