To make Low-Calorie Blueberry Jam, you'll need:
  • 2 cups blueberries
  • 1/3 cup sugar
  • 2 tsp grated orange peel
  • 1 envelope unflavored gelatin
  • 1 cup water

Method

  • In a medium saucepan combine fruit and sugar crushing fruit slightly (a potato masher is ideal)
  • Cook slowly 5 minutes then boil rapidly for 3 minutes stirring constantly
  • Stir in grated peel.
