To make Low-Calorie Spinach Pasta With Sun-Dried Tomatoes, you'll need:
  • 1/2 cup Dry sun-dried tomatoes (1/2 oz)
  • 12 oz Evaporated skimmed milk
  • 1
  • 1/2 cup Low-fat cottage cheese
  • 1 cl To
  • 2 Garlic cloves quartered
  • 1/2 tsp Salt
  • 1/2 tsp Pepperblack
  • 1/8 tsp Red-pepper flakes
  • 3 oz Parmesan grated (3/4 c)
  • 2 tbsp Olive oil
  • 3/4 cup Basil fresh packed chopped
  • 1 lb Spinach noodles cooked al dente

Method

  • Pour boiling water to cover the sun dried tomatoes
  • Allow to stand for 10 min
  • Drain and cut into pieces
  • (Discard the water.)
