Ingredients
To make Low Carb Tacos, you'll need:
  • 300g cheddar cheese, grated
  • 500g  lean beef mince
  •  400g tinned chopped tomatoes
  • Pinch of salt and pepper
  • 2 tbsp taco seasoning/chili powder
  • 4 tbsp sour cream
  • 1 medium avocado
  • 75g grated cheddar cheese
  • 1/4 medium head of iceberg lettuce 

Method

  • Preheat oven to 175 degrees
  • On a baking parchment lined tray, place 5 piles of 70g grated cheddar cheese onto the sheet and form into single layer disks
  • Bake for 5-7 minutes until the edges of the cheese disks are brown
  • Let them cool for 2-3 minutes then lift it up and place each disk over the handle of a spoon, or other utensil that is balanced on two cups.
  • Let the cheese cool completely on the spoon before removing.
  • Place the mince in a pan over medium high heat and cook until the meat is completely cooked through
  • Drain the grease from the meat and then add the can of chopped tomatoes and the seasonings. Cook through until completely cooked through.  Simmer for 5 minutes.
  • Add the meat mixture to your cheese taco shells and top with sour cream, avocado, grated cheddar cheese and lettuce.
