Ingredients
To make Marinated Vegetable Salad, you'll need:
  • 400 c Chopped tomatoes **SEE NOTE
  • 100 c Chopped celery
  • 100 c Chopped onion 050 c Chopped green pepper 075 c Red wine vinegar 050 c Vegetable oil 025 c Sugar (or sugar subst)
  • 200 tb Poppy seeds (optional)
  • 100 tb Salt **NOTE
  • 2 cups more tomatoes -can be added safely without -adjusting anything else

Method

  • Combine tomatoes celery onion and green pepper in a large bowl
  • Toss lightly
  • Combine remaining ingredients in a jar
  • Cover tightly and shake vigorously
  • Pour marinade over vegetables
  • Cover and chill at least 3 hours
  • Yield: 6 to 8 servings
