To make Mexican Tomato Salsa, you'll need:
  • 4 ripe vine tomatoes 
  • 1 red onion, finely chopped 
  • 1 tsp. garlic, finely chopped 
  • 1 tsp. coriander, finely chopped 
  • Juice of half a lime 
  • 1 red chilli, finely chopped (optional) 
  • Salt to taste

Method

  • Finely chop the tomatoes. 
  • Add the rest of the ingredients and mix thoroughly. 
  • If you want a finer salsa, put all the ingredients in a food processor and whizz. 
  • Serve with barbecued or grilled meat or vegetables.
