Mushroom and Goats Cheese Tart

Ingredients
To make Mushroom and Goats Cheese Tart, you'll need:
- 250g cream cheese
- 100g soft goat’s cheese
- 2 tsp. fresh rosemary
- Pepper, to season
- 1 tbsp. butter
- 1 white onion, finely chopped
- 600g mixed mushrooms, coarsely chopped
- Salt, to season
- 250g filo pastry
- 50g extra-virgin olive oil
Method
- Preheat the oven to 200°c of Gas Mark 6.
- Mix the cream cheese, goat’s cheese, fresh rosemary, and pepper in a bowl and set aside.
- Heat the butter in a large pan over a medium heat and add the onions, mushrooms, and salt.
- Cook for around 3 minutes until the onion softens and the juices from the mushrooms are released; this ought to take approximately 4 minutes.
- Then, place the contents of the pan to one side.
- Next, line a large baking sheet (approximately 12 by 17 inches) with greaseproof paper.
- Place a large sheet of filo pastry on the tray.
- Lightly oil the sheet with a pastry brush.
- Repeat this process, and layer the rest of the filo pastry sheets on top.
- Spread the cheese mixture evenly over the filo pastry and spoon the mushroom mixture on top.
- Carefully roll the edge of the tart about 3/4 of an inch inwards. This slightly thicker layer will form the out rim of the tart. Bake the tart for 25-30 minutes ensuring that the crust is brown and crispy.
- Allow the tart to cool on the tray for several minutes.
- To serve, lift up the parchment paper, and slide the tart onto a sizeable platter.
- Serve the tart warm: filo pastry can lose its texture when cold.
