To make Mushroom Rago t With Polenta, you'll need:
  • 1 package dried porcini mushrooms - (abt
  • 1/2 oz)
  • 1/2 cup boiling water
  • 1 can vegetable broth - (14 oz)
  • 1/2 cup yellow cornmeal
  • 1 tbsp olive oil
  • 1/3 cup sliced shallots = (or chopped sweet onion)
  • 1 package sliced mixed fresh exotic mushrooms (4 oz) = (or sliced cremini mushrooms)
  • 4 garlic cloves minced
  • 1 can Italian-style diced tomatoes - (14
  • 1/2 oz) undrained
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped fresh basil or parsley
  • 1/2 cup grated fat-free Parmesan cheese

Method

  • Soak porcini mushrooms in boiling water 10 minutes.
