To make Oven-Baked Parmesan Zucchini, you'll need:
  • 4 small zucchini scrubbed and diagonally sliced about
  • 1/2" thick
  • 2 eggs or egg substitutes beaten
  • 2 tbsp unbleached white flour
  • 3 tbsp Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil

Method

  • Preheat the oven to 350 degrees.
  • Dip each zucchini slice into the beaten egg.
