To make Oven-Roasted Boston Scrod, you'll need:
  • 1/2 cup seasoned dry bread crumbs
  • 1 tsp paprika
  • 1 tsp grated fresh lemon peel
  • 1 tsp dried dill weed
  • 3 tbsp all-purpose flour
  • 2 egg whites
  • 1 tbsp water
  • 1
  • 1/2 lb Boston scrod fillets cut
  • 6 (4-oz) pieces = (or orange roughy fillets)
  • 2 tbsp margarine melted Lemon wedges for serving TARTAR SAUCE
  • 1/2 cup nonfat or reduced-fat mayonnaise
  • 1/4 cup sweet pickle relish
  • 2 tsp Dijon mustard
  • 1/4 tsp hot pepper sauce (optional)

Method

  • Preheat oven to 400 degrees
  • Spray 15- by 10-inch jelly-roll pan with nonstick cooking spray.
